Italian stir-fried chicken is best Italian chicken recipe with vegetables and tomatoes is tasty and particularly rich in vitamins and polyphenols.

Who doesn’t love a quick, flavourful meal? As much as i love playing with my food, that doesn’t mean I don’t like to get dinner on the table in double quick time, all the while experimenting with flavours and finding new ways to make food more delicious and more fun!

I’m a fan of red and green foods for the holidays and this Low-Carb Chicken Stir-Fry Sheet Pan Meal is so deliciously red and green that it seems perfect for my Friday Favorites pick this week! And this recipe has been such a favorite! It’s been hugely popular on the blog, and I have made it quite a few times myself for a quick-and-easy dinner.

The idea for taking all the ingredients that usually would go into a chicken stir-fry and cooking them in a hot oven for a sheet pan meal, just popped into my head one day.

Some days you just don’t know where time goes. That’s true no matter who you are, what you do. And when you’re a food blogger, working on a cake recipe and you’re testing it, developing it, baking it, taking pictures of it and putting together a post so it can see the light of day at some point in the near future, dinner time can sneak up on you like an inattentive driver on the road. This super tasty and super easy meal came to be on one of those days.

This Italian stir-fried chicken with vegetables is one of those meals!

Steps

  1. Reheat the oil over medium heat in a non-stick pan.
  2. Add the chicken. Brown it for 4 minutes so that it is barely cooked. Add salt and pepper. Book.
  3. In the same container, brown the peppers and zucchini for 4 min. They must be tender. Salt. Add the garlic. Sauté 30 seconds.
  4. Add the tomatoes and oregano and cook for 1 min. Return the chicken to the pan. Sprinkle with vinegar. Reheat for a few seconds and serve.
  5. Nutritional information per person: 251 calories, 30.6g protein, 7.5g carbohydrates, 11g fat (including 2.5g saturated fat), 94mg cholesterol, 3.1g fiber, 845mg potassium
